Homemade Italian Giardiniera

Giardiniera

Giardiniera is a cured, spicy, vinegary vegetable mixture that my father in law makes.  This year, I helped him make a lot for himself and I made a small batch for me and my husband.  You can eat the giardiniera on pasta, bread or just by itself.

To make the giardiniera, start with vegetables.  Green tomatoes, carrots, celery, cauliflower and eggplant.  It helps to have some long hots too.  I like to add them whole.

To begin, cut up all the vegetables into pieces roughly the same size.  Then find a bucket.  Put the veggies in the bucket layering veggies and coarse sea salt.  Weigh the veggies down and cover the bucket.  Leave the veggies for 24 hours and then rinse and drain them.  Layer the veggies again with salt, weigh them again and leave it alone for a month.  The salt cures the vegetables, so they don’t go bad.

Once a month has past, rinse the veggies really, really, really well.  I rinsed mine about 3 times, this is where all the salt comes off.  Drain in a colander and sprinkle on some white vinegar.  Let that mixture sit for about 15-20 minutes.

After about 20 minutes, it’s time to press the vegetables.  My father in law has an old press that his father used to use to make his giardiniera.  If you’re not lucky enough to have an Italian press, simply add some weight to you vegetables.  It’s not an exact science.  Simply get as much liquid as you can out of the mixture.

Last thing to do is pack the giardiniera in resealable containers.  Pack the veggies in and cover in canola oil.  We use Mason jars.  It will last forever as long as there is always oil above the vegetables.

Is Instagrammed a word?  It is now.  I haven’t posted in a hot second, I apologize.  I’ve been quite busy.  Enjoying things like cigars, figs and Mexico!  And espresso.  I can’t get enough!  This little stove-top espresso maker (with the cup and saucer) was our wedding favor.  How Italian, right??  I love it and use it just about everyday.  It makes two perfect cups of espresso, or one large one if you really need a pick-me-up!  (Follow me on Instagram at GeorgiaJen)

My husband and I celebrated our 2nd anniversary in style!  We headed off to Mexico for a little R&R.  We stayed at the Ocean Coral & Turqusea resort in Puerto Morelos, Mexico.  It’s an all inclusive resort, so I drank and ate my little heart out.  It was wonderful!

Have you ever seen those lists that float around – How can you tell you’re really Southern?  How can you tell you’re a Yankee?  Well, you can tell you’ve married into an Italian family if you randomly see your Italian father-in-law tending to the two fig trees he has planted in your backyard.  We had a huge fig tree 3 years ago, but it got to be too big.  So, we planted two new ones a couple years ago and this is the first year they will bear fruit.  This beautiful gem was out first fig of the season.  I ate it with some cheese.  Italian, of course.

After we came home from Mexico, my very Italian father-in-law taught me how to make giardiniera.  (Full post coming soon!)  Giadiniera is a pickled, cured vegetable mixture.  We made a huge batch together and then I (attempted) to make a smaller batch of my own at home.  So far, so good!  I’ll keep you posted!  We enjoyed homemade wine and peppers fresh from my FIL’s garden with lunch that day!

Obviously I’m embracing the Italian side of my family.  The MIL & FIL are going to Italy in a few weeks and I can’t wait until they get back.  Why?  They will bring cheese, torrone and Calabrian Bomb (which isn’t a bomb, lol, it’s a spicy, peppery, vinegary condiment!)
